Whipped feta & herb dip with a prune swirl
Preparation time: 10 minutes
The herbs and lemon give this dip a real freshness while the prunes add a natural sweetness that compliments the feta perfectly. Easy to make and a real crowd-pleaser.
Level of Difficulty: Easy
½ cup (100g) Australian prunes, pitted
200g feta cheese, preferably Danish
Zest and juice of 1 lemon
3 scallions, finely chopped
½ cup chopped mixed fresh herbs (such as mint, parsley, coriander, thyme & dill)
1. First, make the prune puree. Place the prunes in a blender/food processor and pour over 2 tbsp boiling water. Pulse until a rough puree is formed – still with some texture. Scrape out into a bowl and set aside.
2. To the same blender, add the feta cheese and blend for 30 seconds or so until smooth and creamy. Scrape sides down and repeat if necessary. Add the finely grated lemon zest and juice and mix to combine. Fold in the chopped scallions and herbs (reserve a little for sprinkling on top)
3. Finally, add the reserved prune mixture and lightly stir through 1 or 2 times only to make the swirl effect. Transfer to a serving bowl and scatter over remaining herbs. Serve with crackers, pita bread, or toasts.
