Honey and Orange Muffins with Prune Compote

Preparation time: 120 minutes
Serves: 12

INGREDIENTS

Muffins
250 grams plain flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
cup marmalade
120ml fresh orange juice
1 egg
125g unsalted butter (at room temperature)
150g honey

Prune compote
12 prunes
50g sugar
Juice of 1 orange

METHOD

Muffin
Heat the butter and the honey together just until the butter melts. Add the orange juice, marmalade and egg. Mix until it all comes together but do not overbeat.

Mix the dry ingredients together and add them to the wet ingredients until they just come together.

Compote
Mix all ingredients together and let sit for 3 hours or overnight. Bring to a simmer until the syrup thickens and coats the prunes well. Do not overheat to caramelise the sugar.

Fill a 12 cup muffin tin. Bake at 190 degrees for 15-20 mins. Place a prune on each muffin and glaze with any remaining prune syrup
