Banana & Prune Loaf

Preparation time: 60 minutes


2 cups SR flour
1 cup brown sugar
2 eggs
1 cup mashed banana
tsp bicarb soda
cup milk
1 tsp vanilla
cup prune puree


1. Preheat oven to 170o C. Lightly grease 6cm deep, 10cm X 20cm loaf tin.
2. Sift flour and bicarb into bowl. Add sugar. Stir to combine. Place eggs, milk and vanilla in a jug. Whisk to combine. Fold milk mixture, banana and prune into flour mixture. Pour into prepared tin.
3. Bake 60 minutes or until skewer comes out clean.
