Recipes... prunes with panache...
Preparation time: 25-30 minutes
350g white chocolate
140g caster sugar
100g prune puree
1 tsp vanilla
115g SR flour
1. Preheat oven to 190oC. Grease and line 28cm X 18cm baking tin.
2. Chop half of chocolate into small pieces. Place remaining chocolate and butter in a small saucepan and stir over a very low heat until melted. Remove from heat and add vanilla.
3. Place eggs and sugar in a large bowl and whisk together until pale and creamy. Beat in the melted chocolate mixture. Fold in the flour, then add nuts, prunes and chopped chocolate. Spoon into tin.
4. Bake for 25-30 minutes. Leave to cool in tin.
