Recipes... prunes with panache...

Prune Crumble Slice

Preparation time: 40 minutes
Serves:

INGREDIENTS

Filling:
300g chopped pitted dried prunes, 2 cups sugar, 1 cup water, 1 tablespoon lemon juice
chopped walnuts

Slice:
cup plain flour, cup brown sugar, teaspoon bicarb soda, 2 cups rolled oats, 1 egg
1 teaspoons melted butter

METHOD

Chop prunes, bring water and lemon juice to a simmer, ass prunes. Simmer with lid off for 10-15 minutes. Cool and put through a food processor. Add nuts.

Slice - spray square baking pan with non-stick spray. Combine dry ingredients and mix well. Lightly beat egg and butter, add to oats mixture. Press 2 cups of mixture into prepared pan, spread prune filling over oats. Sprinkle remaining oats over top. Bake at 180 C for 20 minutes, until brown.
Cool and cut.
